As poultry prices began to rise in China, KFC was forced to get creative with their offerings. In an effort to protect its profits, the restaurant chain introduced a brand new cut of chicken. Yum China a spin-off from the U.S. corporate Yum Brand that runs KFC in China, said they turned to "a part of the chicken that we somehow have not used in the last 30-some years,". Business Insider reports that the name of the piece was said in Mandarin and not translated in the transcript, but is described as "the piece of chicken between the chicken wing and the chicken breast."
